Creamy Polenta with Lentil Ragù

  • 1 pcsyellow onion, finely chopped
  • 1 pcscarrot, finely chopped
  • 1 pcscelery stalk, finely chopped
  • 2 clovegarlic, minced
  • 1 cupdried green lentil, rinsed
  • 1 cancrushed tomato, 400g
  • 3 cupvegetable broth
  • 0.5 tspdried oregano
  • 0.5 tspdried thyme
  • 1 pcsbay leaf
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

polenta

  • 1 cupquick-cooking polenta
  • 4 cupwater
  • 0.5 tspsalt
  • 2 tbspnutritional yeast

garnish

  • 2 tbspfresh parsley, chopped(optional)

The method

Step by step

    Heat olive oil in a large pot or Dutch oven over medium heat.

    Add yellow onion, carrot, and celery stalk to the pot and sauté for 5-7 minutes until softened.

    Stir in the garlic and cook for another 1 minute until fragrant.

    Add dried green lentils, crushed tomatoes, vegetable broth, dried oregano, dried thyme, and bay leaf to the pot.

    Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until lentils are tender.

    Remove the bay leaf from the ragù and season with salt and black pepper to taste.
