  • 3 clovegarlic, minced
  • 794 gcanned diced tomato
  • 80 gcremini mushroom, chopped
  • 0.5 cupwater
  • 0.25 cuptamari
  • 0.5 tspdried basil
  • 0.5 tspdried oregano
  • 0.5 tspchili powder
  • 1.5 tspmolasses(optional)
  • 1 pinchcayenne pepper
  • 0.25 tspblack pepper, freshly ground(optional)
  • 0.5 tspsalt

The method

Step by step

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the chopped onion and bell pepper and sauté for 5-7 minutes, until softened and translucent.

    Cook’s note: Stir occasionally to prevent the vegetables from browning too much.

    Stir in the minced garlic and cook for one more minute until fragrant.

    Cook’s note: Be careful not to burn the garlic, as it can become bitter.

    Add the diced tomatoes, chopped mushrooms, water, tamari, dried basil, oregano, chili powder, optional molasses, cayenne pepper, optional black pepper, and salt.

    Stir everything well to combine, then bring the mixture to a gentle simmer.

    Reduce the heat to low, cover the pot, and let the sauce simmer for at least 15 minutes, stirring occasionally.

    Cook’s note: For a deeper flavor, you can simmer the sauce for up to 30 minutes; just add a splash of water if it becomes too thick.
