The method

Step by step

    Score the skin of the duck in a crosshatch pattern, being careful not to cut into the meat.

    In a small bowl, combine the five-spice powder and salt.

    Rub the spice mixture all over the duck, inside and out. Place the ginger slices, spring onion pieces, star anise, and Sichuan peppercorns into the duck cavity.

    Place the duck in a large steamer basket or on a rack set over a pot of boiling water. Cover tightly and steam for 1.5 hours, or until very tender.

    Carefully remove the duck from the steamer and let it cool slightly. Discard the aromatics from the cavity and pat the duck very dry with paper towels.

    Preheat your oven to 200°C (400°F).

    Place the duck on a wire rack set over a baking tray. Roast for 45-60 minutes, or until the skin is deeply golden brown and very crispy.

    While the duck is roasting, whisk together the soy sauce, honey, and water for the basting glaze.
