The method

If not already sliced, cut the Dominican salami into rounds approximately 1 cm (1/2 inch) thick.

Heat the vegetable oil in a large skillet over medium-high heat until it shimmers slightly.

Cook’s note: A cast-iron skillet works great for achieving a good crust.

Carefully arrange the salami slices in the hot pan in a single layer, ensuring they don't overlap.

Fry for 3-4 minutes on the first side until deeply browned and the edges are crispy.

Flip the salami slices. For a softer center, add the optional water to the pan and cover immediately to steam for 1 minute.

Cook’s note: Be careful as the water will cause the oil to spatter.

Uncover the pan and continue frying for another 2-3 minutes until the second side is also browned and crisp.

Transfer the fried salami to a paper towel-lined plate to drain off excess oil.
