  • 3 tbsplemon juice, freshly squeezed
  • 2 tbspolive oil, extra virgin
  • 2 tbspfresh parsley, finely chopped
  • 0.5 tspdried oregano
  • 1 clovegarlic, minced
  • 0.25 tspsalt
  • 0.13 tspblack pepper, freshly ground

The method

Step by step

    Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper.

    In a large bowl, combine the broccoli florets, bell pepper, zucchini, and red onion.

    Drizzle the vegetables with the olive oil for roasting, then sprinkle with salt and black pepper.

    Cook’s note: Do not overcrowd the pan, as this will steam the vegetables instead of roasting them. Use two sheets if necessary.

    Roast for 20 minutes, then add the cherry tomatoes to the baking sheet and continue roasting for another 10-15 minutes, or until vegetables are tender and slightly caramelized.

    Cook’s note: The cherry tomatoes cook faster, so adding them later prevents them from becoming mushy.

    While the vegetables roast, combine the farro and water in a medium saucepan.
