The method
Step by step
- 1
In a bowl, combine the pork shoulder, soy sauce, and calamansi juice.
Cook’s note: If calamansi is unavailable, use lime juice as a substitute.
- 2
Marinate the pork for at least 15 minutes, or ideally for 30 minutes in the refrigerator.
About 15 min
- 3
Heat cooking oil in a large pot or Dutch oven over medium heat.
About 1 min
- 4
Sauté the minced garlic until fragrant, about 30 seconds.
About 1 min
- 5
Add the chopped yellow onion and cook until softened, about 3-4 minutes.
About 4 min
- 6
Add the marinated pork (reserve the marinade) to the pot and cook until lightly browned on all sides, about 5-7 minutes.
About 7 min
- 7
Pour in the reserved marinade, tomato sauce, and water.
- 8
Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20 minutes, or until the pork is tender.
About 20 min
Cook’s note: Stir occasionally to prevent sticking.
- 9
Add the cubed potatoes and carrots to the pot.
- 10
Continue to simmer for another 10-15 minutes, or until the vegetables are tender.
About 15 min
- 11
Stir in the pork liver, bell pepper, and green peas.
Cook’s note: Adding the liver later prevents it from becoming tough.
- 12
Cook for an additional 3-5 minutes, until the liver is cooked through and the bell peppers are slightly tender-crisp.
About 5 min
- 13
Season with salt and black pepper to taste.
Cook’s note: Adjust seasoning as needed before serving.
- 14
Serve hot with steamed white rice.
