- 1 pcsyellow onion, chopped
- 2 pcscarrot, diced
- 2 pcscelery stalk, diced
- 3 clovegarlic, minced
- 411 gcanned diced tomatoes, undrained
- 4 cupvegetable broth
- 1 tspfresh thyme, chopped
- 1 pcsbay leaf
- 0.5 tspsalt
- 0.25 tspblack pepper, freshly ground

The method

Rinse the puy lentils under cold water and set aside.

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the yellow onion, carrot, and celery to the pot.
