The method

Step by step

    Preheat your oven to 175°C (350°F).

    In a large bowl, beat the softened cream cheese with an electric mixer until smooth and free of lumps.

    Add the granulated sugar and vanilla extract to the bowl.

    Beat on medium speed until the sugar is fully incorporated and the mixture is light and fluffy.

    Add the eggs one at a time, mixing on low speed just until each egg is blended in.

    Cook’s note: Do not overmix after adding the eggs, as this can cause the cheesecake to crack during baking.

    Pour the cheesecake filling into the prepared graham cracker crust.

    Use a spatula to spread the filling into an even layer.
