The method

Rinse and drain the canned fava beans thoroughly.

In a medium saucepan, combine the fava beans and water.

Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 15 minutes, allowing the beans to soften further.

Cook’s note: Mashing some of the beans against the side of the pot with a spoon will create a creamier texture.

While the beans are simmering, prepare the sauce by whisking together the lemon juice, olive oil, minced garlic, ground cumin, chili powder, salt, and black pepper in a small bowl.

After 15 minutes, add the prepared sauce to the simmering fava beans and stir well to combine.

Continue to simmer the ful medames for another 45 minutes, stirring occasionally, until the flavors have melded and the beans are very tender.

Cook’s note: If the mixture becomes too dry, add a splash more water or olive oil.
