Garlic Mushrooms
These Spanish-style garlic mushrooms are a simple yet flavorful side dish, perfect for tapas or accompanying a main course. Fresh mushrooms are quickly sautéed with plenty of garlic and a touch of parsley.

- 500 gcremini mushroom, cleaned and quartered
- 3 tbspolive oil
- 6 clovegarlic, finely minced
- 0.25 cupdry white wine
- 2 tbspfresh parsley, chopped
- 1 tspsalt
- 0.5 tspblack pepper, freshly ground
- 0.25 tspred pepper flake(optional)

The method
Step by step

Heat a large skillet or frying pan over medium-high heat.

Cook’s note: Ensure the pan is hot before adding oil to prevent sticking and get a good sear on the mushrooms.

Add the olive oil to the hot pan.

Add the cremini mushrooms to the pan in a single layer if possible, working in batches if necessary to avoid overcrowding.
Cook’s note: Overcrowding will steam the mushrooms instead of browning them.

Cook the mushrooms for 5-7 minutes, stirring occasionally, until they release their liquid and start to brown.

Stir in the garlic and red pepper flakes (if using) and cook for another 1-2 minutes until fragrant.

Cook’s note: Be careful not to burn the garlic.

Pour in the dry white wine and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pan, until the liquid has mostly evaporated.

Remove from heat and stir in the fresh parsley.
