  • 2 pcsegg, large
  • 70 gparmesan cheese, grated
  • 150 gmozzarella cheese, diced
  • 100 gcured ham, diced
  • 60 mlmilk
  • 30 gbutter, melted, plus extra for greasing
  • 2 tbspfresh parsley, chopped
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground
  • 2 tbspbreadcrumbs

The method

Step by step

    Preheat your oven to 180°C (350°F). Grease a 9x13 inch baking dish with butter and sprinkle with breadcrumbs, ensuring an even coating.

    Place the quartered potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are very tender when pierced with a fork.

    Drain the cooked potatoes thoroughly and return them to the empty pot. Mash them until smooth, using a potato masher or a fork.

    Add the eggs, parmesan cheese, milk, melted butter, chopped parsley, salt, and pepper to the mashed potatoes. Mix well until all ingredients are fully combined.
