The method

Step by step

    Thoroughly clean the beef small intestine by rinsing under cold water, then rub with coarse salt and rinse again. Repeat this process 2-3 times to remove any impurities and odor.

    In a medium bowl, combine the minced garlic, soy sauce, sesame oil, rice wine, sugar, and black pepper to create the marinade.

    Cover the bowl and refrigerate for at least 45 minutes, or up to 2 hours, allowing the gopchang to absorb the flavors.
