The method

Step by step

  1. 1

Preheat a grill pan or outdoor grill to medium-high heat.

    About 3 min

Cook’s note: Ensure the grill is hot enough to get good grill marks on the halloumi.

  2. 2

Place the halloumi slices directly on the preheated grill.

  3. 3

Grill for 2-3 minutes per side, until golden brown with visible grill marks.

    About 5 min

Cook’s note: Watch carefully to prevent burning, as halloumi cooks quickly.

  4. 4

While the halloumi cooks, prepare the dressing by whisking together the olive oil, lemon juice, dried oregano, salt, and black pepper in a small bowl.

    About 2 min

  5. 5

In a large salad bowl, combine the diced cucumber, halved cherry tomatoes, thinly sliced red onion, diced bell pepper, and mixed greens.

    About 5 min

  6. 6

Once grilled, remove the halloumi from the heat and cut it into bite-sized pieces.

    About 1 min

  7. 7

Add the warm, cut halloumi to the salad bowl with the vegetables.

  8. 8

Pour the prepared dressing over the salad ingredients.

  9. 9

Toss gently to ensure all ingredients are well coated with the dressing.

    About 1 min

Cook’s note: Serve immediately for the best texture and flavor.
