Equipment

The method

Step by step

  1. 1

In a shallow dish, combine the olive oil, soy sauce, smoked paprika, garlic powder, and black pepper for the marinade.

    About 2 min

  2. 2

Add the seitan steaks to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 15 minutes, or up to 30 minutes.

Cook’s note: Marinating longer will enhance the flavor.

  3. 3

While the seitan marinates, prepare the chimichurri. In a small bowl, combine the fresh parsley, fresh oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.

    About 8 min

Cook’s note: Finely chopping the herbs ensures a better texture for the chimichurri.

  4. 4

Stir the chimichurri ingredients well to combine. Taste and adjust seasoning as needed.

    About 1 min

  5. 5

Preheat a grill or grill pan to medium-high heat.

    About 5 min

  6. 6

Once hot, place the marinated seitan steaks on the grill. Cook for 4-6 minutes per side, until well-browned with nice grill marks.

    About 10 min

Cook’s note: Avoid moving the steaks too much to get good grill marks.

  7. 7

Remove the seitan steaks from the grill and let them rest on a cutting board for 5 minutes.

    About 5 min

Cook’s note: Resting helps the seitan retain its juiciness.

  8. 8

Serve the grilled seitan steaks warm, topped generously with the fresh chimichurri sauce.
