  • 1 pcsleek, trimmed, washed, and sliced
  • 2 lbeef or lamb stock
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground
  • 1 pcsbay leaf

The method

Step by step

    Place the lamb shoulder in a large pot or Dutch oven and cover with cold water. Bring to a boil, then skim off any foam that rises to the surface.

    Drain the water, rinse the lamb, and return it to the clean pot.

    Add the pearl barley, chopped onion, diced carrot, diced celery, diced swede, bay leaf, beef or lamb stock, salt, and black pepper to the pot with the lamb.

    Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 hours, or until the lamb is very tender.
