  • 2 pcscelery stalk, diced
  • 3 clovegarlic, minced
  • 800 gdiced tomato, canned
  • 1.5 lvegetable broth
  • 200 gpotato, peeled and diced
  • 1 pcszucchini, diced
  • 150 ggreen bean, trimmed and cut into 1 inch pieces
  • 400 gkidney bean, canned, rinsed and drained
  • 100 gsmall pasta, such as ditalini or elbow macaroni
  • 100 gfresh spinach
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

garnish

  • 2 tbspfresh parsley, chopped(optional)

The method

Step by step

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the onion, carrot, and celery to the pot and cook, stirring occasionally, until softened, about 5-7 minutes.

    Stir in the garlic and cook for another minute until fragrant.

    Pour in the diced tomatoes and vegetable broth, then add the diced potato, zucchini, and green beans.
