The method

Step by step

    Place the potatoes in a large pot and cover with cold, salted water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until fork-tender.

    While the potatoes cook, heat a large skillet over medium heat. Add the diced bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, reserving the rendered fat in the pan.

    Add the diced apples to the skillet with the reserved bacon fat. Cook over medium heat for 8-10 minutes, stirring occasionally, until softened. If desired, stir in the sugar during the last few minutes of cooking.

    Drain the cooked potatoes thoroughly. Return them to the pot and mash them using a potato masher or fork. Add the butter and warm milk, then mash until smooth and creamy.
