The method

Step by step

    Place the chopped kabocha squash and water in a large pot and bring to a boil over medium-high heat.

    Reduce the heat to medium-low, cover, and simmer for 15-20 minutes, or until the squash is very tender.

    Carefully transfer the cooked squash and cooking liquid to a blender or use an immersion blender to blend until smooth.

    Return the pumpkin puree to the pot. Add the soaked short-grain rice, sugar, and salt.

    Bring the mixture back to a gentle simmer over medium-low heat, stirring frequently to prevent sticking, for about 10-12 minutes, or until the rice is cooked and thickened.

    In a small bowl, whisk together the sweet short-grain rice flour and the slurry water to create a smooth paste.
