  • 0.25 tspblack pepper, freshly ground

The method

Step by step

    Add the sliced carrots and water to a large skillet or frying pan.

    Bring the water to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer for 5-7 minutes, or until carrots are tender-crisp.

    Cook’s note: Do not overcook the carrots at this stage, they should still have a slight bite.

    Remove the lid and increase the heat to medium-high. Cook until all the water has evaporated.

    Add the ghee and honey to the pan with the carrots. Stir well to coat the carrots.

    Continue to cook, stirring frequently, for another 3-5 minutes, until the carrots are nicely glazed and slightly caramelized.

    Cook’s note: Watch closely to prevent burning, as the honey can caramelize quickly.
