- 50 gserrano ham, thinly sliced

The method

Heat the olive oil in a large frying pan over medium heat.

Add the sliced potatoes to the hot oil and fry gently, stirring occasionally, until tender and golden brown, about 15 minutes.

Cook’s note: The potatoes should be soft inside and slightly crispy on the outside, not deeply fried.

While the potatoes are cooking, gently fry the serrano ham in a separate small pan over medium heat until slightly crispy, about 2-3 minutes. Set aside.

Once the potatoes are cooked, remove them from the pan with a slotted spoon and drain any excess oil. Season with salt and pepper.

Carefully crack the eggs into the same pan with the remaining oil. Fry them until the whites are set but the yolks are still runny, about 2-3 minutes.

Cook’s note: You can baste the yolks with hot oil for a more evenly cooked white.
