Kalinti (Karantika)

Mise en place

Ingredients

Ingredients

  • 250 gchickpea flour
  • 750 mlwater
  • 1 pcsegg
  • 2 tbspolive oil
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground

garnish

  • 0.5 tspcumin(optional)

Equipment

large bowl · oven · whisk · baking dish

The method

Step by step

  1. 1

Preheat your oven to 200°C (400°F). Lightly grease a 20x20 cm (8x8 inch) baking dish or a round pie dish.

    About 10 min

  2. 2

In a large bowl, whisk together the chickpea flour and salt.

    About 1 min

  3. 3

Gradually add the water to the chickpea flour mixture, whisking continuously to avoid lumps. Continue until the batter is smooth.

    About 3 min

Cook’s note: A balloon whisk works best for this.

  4. 4

Add the egg and olive oil to the batter and whisk well until fully incorporated.

    About 1 min

  5. 5

Pour the batter into the prepared baking dish.

    About 1 min

  6. 6

Bake for 40-45 minutes, or until the kalinti is set, golden brown on top, and slightly firm to the touch.

    About 45 min

Cook’s note: The center should be custard-like, but not liquid.

  7. 7

Remove from the oven and let it cool slightly in the dish before slicing.

    About 5 min

Cook’s note: It firms up a bit as it cools, making it easier to cut.

  8. 8

Serve warm, seasoned with black pepper and an optional sprinkle of cumin.

Cook’s note: Kalinti is often served in a baguette as a sandwich in Morocco.
