The method

Step by step

    Warm the milk to lukewarm (about 37°C or 98°F). In a large bowl, crumble the fresh yeast into the milk and stir until dissolved.

    Add the melted butter, granulated sugar, ground cardamom, and salt to the yeast mixture. Mix well.

    Gradually add the all-purpose flour, mixing until a shaggy dough forms. Turn the dough out onto a lightly floured surface.

    Knead the dough for about 10-15 minutes until it is smooth, elastic, and no longer sticky. You can also use a stand mixer with a dough hook.

    Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 60-90 minutes, or until doubled in size.

    Cook’s note: A slightly warm oven (turned off) can be a good spot for rising dough.

    While the dough is rising, prepare the filling. In a small bowl, combine the softened butter, granulated sugar, and ground cinnamon. Mix until well combined and smooth.

    Roll the dough into a large rectangle, approximately 40x50 cm (16x20 inches).
