The method

    In a medium saucepan, whisk together the full-fat coconut milk, sweetened condensed coconut milk, granulated sugar, cornstarch, vanilla extract, and salt until well combined and the cornstarch is dissolved.

    Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring constantly to prevent sticking. Continue to cook for about 5-7 minutes, or until the mixture thickens slightly and coats the back of a spoon.

    Cook’s note: Do not allow it to boil vigorously, as this can cause the coconut milk to separate.

    Remove the saucepan from the heat and let the mixture cool to room temperature.

    Once cooled, transfer the coconut mixture to an airtight container and refrigerate for at least 4 hours, or preferably overnight, until thoroughly chilled.

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions, typically for 20-30 minutes, until it reaches a soft-serve consistency.

    Cook’s note: If you don't have an ice cream maker, you can pour the mixture into a freezer-safe container and freeze, stirring every 30-60 minutes for 3-4 hours to break up ice crystals.
