The method

Step by step

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

    About 1 min

  2. 2

Add the ground beef to the pot and cook, breaking it apart with a spoon, until browned and no longer pink, about 6-8 minutes.

    About 7 min

Cook’s note: Drain any excess fat if desired, although for keto, some fat is welcome.

  3. 3

Stir in the chopped yellow onion and diced green bell pepper, cooking until softened, about 5-7 minutes.

    About 6 min

  4. 4

Add the minced garlic, chili powder, cumin, smoked paprika, dried oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant.

    About 1 min

Cook’s note: Toasting the spices briefly enhances their flavor.

  5. 5

Pour in the diced tomatoes (with their liquid), tomato paste, and beef broth.

    About 1 min

  6. 6

Season with salt and black pepper.

  7. 7

Bring the chili to a simmer, then reduce the heat to low, cover, and let it cook for at least 30 minutes, stirring occasionally.

    About 30 min

Cook’s note: The longer it simmers, the more the flavors will meld together.

  8. 8

Taste and adjust seasonings as needed.

  9. 9

Serve hot, garnished with optional avocado, sour cream, or shredded cheddar cheese.
