Equipment

ladle · large pot · knife · cutting board

The method

Step by step

  1. 1

Combine the rinsed jasmine rice and chicken broth in a large pot and bring to a boil over medium-high heat.

    About 8 min

  2. 2

Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, stirring occasionally to prevent sticking.

    About 15 min

Cook’s note: The rice should be very soft and starting to break down, creating a porridge-like consistency.

  3. 3

Add the sliced chicken breast, minced garlic, soy sauce, fish sauce, and white pepper to the pot.

    About 2 min

  4. 4

Increase the heat slightly to a gentle simmer and cook for another 5-7 minutes, or until the chicken is fully cooked through.

    About 7 min

Cook’s note: Do not overcook the chicken, as it can become tough.

  5. 5

Taste the soup and adjust seasonings if necessary, adding more soy sauce or fish sauce for saltiness, or white pepper for a subtle kick.

    About 1 min

  6. 6

Ladle the hot khao tom into individual serving bowls.

    About 1 min

  7. 7

Garnish each bowl generously with julienned ginger, chopped cilantro, sliced green onion, and optional fried garlic before serving.

    About 1 min

Cook’s note: The fresh ginger and cilantro are key to the traditional flavor.
