- 3 cupwater
- 0.5 cuppoppy seed

- 0.5 cupwalnut, chopped
- 0.5 cupraisin

for poppy seeds
- 0.5 cupwarm water
Equipment
spice grinder · strainer · large pot · mixing bowl · small bowl
The method
Step by step
- 1
Place the wheat berries in a large pot, cover with plenty of cold water, and bring to a boil. Boil for 5 minutes, then drain and rinse the wheat berries.
About 10 min
Cook’s note: Boiling and rinsing helps to remove any bitterness and ensures even cooking.
- 2
Return the rinsed wheat berries to the pot. Add the fresh water, bring to a boil, then reduce the heat to low, cover, and simmer for 60-90 minutes, or until the wheat berries are tender but still have a slight chew.
About 1 hr 30 min
Cook’s note: Check periodically and add a little more water if needed to prevent drying out.
- 3
While the wheat berries cook, place the poppy seeds in a small bowl and cover them with the warm water. Let them soak for at least 30 minutes.
About 30 min
Cook’s note: Soaking softens the poppy seeds, making them easier to process and more flavorful.
- 4
After soaking, drain the poppy seeds thoroughly. Grind them in a spice grinder, mortar and pestle, or small food processor until they form a thick paste.
About 5 min
Cook’s note: Grinding helps release their flavor and creates a creamy texture for the kutya.
- 5
Once the wheat berries are cooked, drain any excess water and let them cool slightly.
About 5 min
- 6
In a large mixing bowl, combine the cooked wheat berries, ground poppy seeds, honey (or maple syrup), walnuts, raisins, and optional almonds and orange zest.
About 2 min
- 7
Mix all ingredients thoroughly until well combined. Taste and adjust sweetness if desired.
About 1 min
- 8
Serve Kutya chilled or at room temperature.
Cook’s note: Kutya is often served in a communal bowl or individual dishes.
