Kwati (Nepali Mixed Bean Soup)
Kwati is a traditional Nepali soup made from a nutritious blend of nine different sprouted beans. This hearty and flavorful soup is often enjoyed during the Janai Purnima festival, offering a warming and wholesome meal.

The method

Rinse the sprouted mixed beans thoroughly under cold water.

Heat the vegetable oil in a large pot or Dutch oven over medium heat.

Add the yellow onion and sauté until it becomes translucent, about 5-7 minutes.

Stir in the grated ginger and minced garlic, cooking for another minute until fragrant.

Add the cumin powder, coriander powder, turmeric powder, and red chili powder. Cook for 30 seconds, stirring constantly, to toast the spices.

Add the diced tomato and cook for 3-5 minutes, breaking it down with your spoon, until it softens and releases its juices.

Add the rinsed mixed sprouted beans to the pot and stir to coat them with the spice mixture.

Pour in the water and add the salt. Bring the mixture to a boil.

Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the beans are tender. Stir occasionally.
