  • 2 pcscarrot, peeled and diced
  • 4 pcspotato, peeled and diced
  • 200 gcelery root, peeled and diced
  • 1 lbeef broth
  • 2 pcsbay leaf
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground
  • 1 tbspvegetable oil

garnish

  • 2 tbspfresh parsley, chopped(optional)

Equipment

ladle · large pot · dutch oven · cutting board · knife

The method

Step by step

  1. 1

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

    About 1 min

  2. 2

Add the beef stew meat to the pot and brown on all sides for about 5-7 minutes. Work in batches if necessary to avoid overcrowding the pot.

    About 7 min

Cook’s note: Browning the meat adds depth of flavor to the stew.

  3. 3

Remove the browned beef from the pot and set aside.

  4. 4

Add the yellow onion to the pot and cook until softened and translucent, about 3-5 minutes.

    About 4 min

  5. 5

Return the beef to the pot, then add the carrot, potato, and celery root.

    About 1 min

  6. 6

Pour in the beef broth and add the bay leaf, salt, and black pepper.

    About 1 min

  7. 7

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for at least 90 minutes, or until the beef and vegetables are very tender.

    About 1 hr 30 min

Cook’s note: The longer it simmers, the more the flavors will meld and the meat will become fork-tender.

  8. 8

Remove the bay leaf before serving.

  9. 9

Taste and adjust seasoning if needed.

    About 1 min

  10. 10

Ladle the lapskaus into bowls and garnish with fresh parsley, if desired.
