- 1 tbspaji amarillo paste
- 300 gfrench fries, cooked

The method

In a bowl, combine the beef sirloin strips with soy sauce, red wine vinegar, cumin, black pepper, and minced garlic.

Heat half of the vegetable oil in a large wok or skillet over high heat until smoking.

Add half of the marinated beef to the hot pan and sear quickly for 2-3 minutes until browned on all sides, then remove to a plate.

Add the remaining vegetable oil and the rest of the beef to the pan, searing until browned, then remove to the same plate.

Add the red onion to the same pan and stir-fry for 2-3 minutes until slightly softened but still crisp.

Stir in the tomato wedges and aji amarillo paste, cooking for another minute.
