Loukaniko

Loukaniko is a traditional Greek sausage, often flavored with orange peel, fennel seed, and various herbs. This recipe pan-fries the sausage until nicely browned and cooked through. Serve it as a flavorful appetizer or part of a meze spread.

The method

    If using raw loukaniko, prick each sausage a few times with a fork to prevent bursting and allow fat to render.

    Heat a large skillet or frying pan over medium heat.

    Add the olive oil to the hot pan.
