  • 250 gcherry tomato, halved

  • 0.5 cupfresh parsley, chopped

  • 1 pcslemon, juiced
  • 3 tbspextra virgin olive oil
  • 1 tspdried oregano
  • 0.5 tspgarlic powder
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

The method

    Drain and thoroughly rinse the lupini beans under cold water, then set aside.

    In a large bowl, combine the lupini beans, cucumber, cherry tomatoes, and red onion.
