The method

Heat the olive oil in a medium non-stick pan or skillet over medium heat.

Add the yellow onion and green bell pepper to the pan and sauté for 5-7 minutes until softened.

Stir in the ripe tomato, salt, black pepper, and red pepper flakes.

Reduce the heat to low, cover the pan, and simmer for 5-7 minutes until the tomatoes have broken down and a sauce has formed.

Create small wells in the tomato mixture with the back of a spoon.

Crack the eggs directly into the wells.

Cover the pan again and cook for 3-5 minutes, or until the egg whites are set and the yolks are still slightly runny (or cooked to your preference).
