  • 1 tbspfresh mint, finely chopped
  • 0.25 tspblack pepper, freshly ground

The method

Step by step

    In a large bowl, combine the warm water, dry yeast, and a pinch of the salt. Let it sit for 5 minutes until foamy.

    Add the olive oil for the dough and the remaining salt to the yeast mixture.

    Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for 30 minutes, or until doubled in size.

    While the dough is rising, prepare the filling. In a medium bowl, combine the mizithra cheese, feta cheese, egg, fresh mint, and black pepper.

    Cook’s note: Mizithra cheese can be found at Greek specialty stores. Ricotta can be a substitute, but the flavor will be different.
