  • 50 gsmoked mackerel, flaked(optional)
  • 50 gshrimp, cooked, peeled(optional)

Equipment

ramekins · skewer · steamer pot · blender · large bowl

The method

Step by step

  1. 1

Blend the soaked and peeled black-eyed peas with the red bell pepper, scotch bonnet pepper, and yellow onion until very smooth, adding a little water if needed to help the blender.

    About 10 min

Cook’s note: Ensure the mixture is as smooth as possible for a fine texture, almost like a thick pancake batter.

  2. 2

Pour the bean mixture into a large bowl.

    About 1 min

  3. 3

Gradually whisk in the vegetable oil and fish stock into the bean mixture, ensuring it is well combined.

    About 5 min

Cook’s note: Adding the oil and stock slowly helps to emulsify the mixture and prevent separation.

  4. 4

Season the mixture with salt and bouillon powder, then taste and adjust as needed.

    About 2 min

  5. 5

Prepare your steaming vessels; if using banana leaves, rinse and gently heat them over a flame to make them pliable. Alternatively, lightly grease individual ramekins or heat-proof bowls.

    About 5 min

Cook’s note: Banana leaves impart a unique flavor; if using, fold them into cone shapes or small pouches.

  6. 6

Fill each prepared vessel about two-thirds full with the bean mixture.

    About 3 min

  7. 7

If using, carefully add a slice of boiled egg, a few flakes of smoked mackerel, or a couple of shrimp into the center of each portion.

    About 2 min

Cook’s note: Do not overfill, as the Moin Moin will expand slightly during steaming.

  8. 8

Arrange the filled vessels in a steamer basket over simmering water, ensuring the water does not touch the base of the vessels.

    About 2 min

Cook’s note: Make sure your steaming pot has enough water to last the entire cooking time, topping up with hot water if necessary.

  9. 9

Cover the steamer tightly and steam for 45-60 minutes, or until a skewer inserted into the center comes out clean.

    About 1 hr

Cook’s note: Cooking time may vary depending on the size of your molds and the intensity of the steam.

  10. 10

Carefully remove the Moin Moin from the steamer and let it cool slightly before serving.

Cook’s note: Moin Moin can be served warm or at room temperature.
