  • 227 gpork sausage, casings removed if necessary
  • 2 tbspchili powder
  • 1 tspground cumin
  • 1 tspsmoked paprika
  • 400 gcrushed tomatoes, canned
  • 240 mlbeef broth
  • 70 gtomato ketchup
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground
  • 240 gkidney bean, canned, drained and rinsed(optional)

The method

Step by step

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the chopped onion and cook for about 5 minutes, stirring occasionally, until softened and translucent.

    Stir in the minced garlic and cook for 30 seconds more, until fragrant.

    Cook’s note: Be careful not to let the garlic burn, as it can become bitter.

    Add the ground beef and pork sausage to the pot, increasing the heat to medium-high.

    Use a spoon to break up the meat and cook until it is fully browned, which should take about 8-10 minutes.

    Carefully drain any excess fat from the pot.

    Cook’s note: Tilt the pot and use a spoon to scoop out the fat, or use a turkey baster.

    Return the pot to medium heat and stir in the chili powder, ground cumin, and smoked paprika. Cook for one minute to toast the spices.

    Pour in the crushed tomatoes, beef broth, and tomato ketchup. Stir well to combine all ingredients.

    Cook’s note: If you are not adding beans, this is the main simmering step. A longer simmer develops deeper flavor.
