  • 0.25 tspsaffron thread, crumbled, steeped in 2 tbsp hot water
  • 0.5 tspblack pepper, freshly ground
  • 1 tspsalt
  • 3 cupchicken broth
  • 0.5 cupcilantro, chopped
  • 0.5 cupparsley, chopped
  • 226 gvermicelli

The method

Step by step

    Season the chicken leg quarters generously with salt and pepper.

    Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.

    Sear the chicken pieces, skin-side down first, until golden brown on all sides; this should take about 3-4 minutes per side. Remove the chicken from the pot and set aside.

    Add the chopped yellow onion to the pot and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.

    Stir in the minced garlic, ground ginger, ground turmeric, and black pepper. Cook for an additional minute until fragrant.

    Pour in the chicken broth and the steeped saffron. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot.
