Equipment
serving cups · fine-mesh sieve · small saucepan
The method
Step by step
- 1
Combine the water, coffee grounds, cinnamon stick, green cardamom pods, ginger powder, and black pepper in a small saucepan.
About 1 min
Cook’s note: Crushing the cardamom pods slightly helps release their flavor.
- 2
Bring the mixture to a boil over medium-high heat, stirring occasionally.
About 2 min
- 3
Once boiling, reduce the heat to low and let it simmer gently for 2-3 minutes to allow the flavors to meld.
About 3 min
Cook’s note: Do not let it boil vigorously, as this can make the coffee bitter.
- 4
Remove the saucepan from the heat and carefully strain the coffee through a fine-mesh sieve or cheesecloth into serving cups.
About 1 min
Cook’s note: A French press can also be used to separate the grounds and spices.
- 5
Add sugar to taste, if desired, and serve immediately.
