  • 425 gblack beans, canned, rinsed and drained
  • 480 mlvegetable broth
  • 200 glong grain white rice, rinsed
  • 1 pcsbay leaf
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

  • 2 tbspcilantro, fresh, chopped(optional)

The method

Step by step

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the yellow onion and green bell pepper to the pot and sauté until softened, about 5-7 minutes.

    Stir in the garlic, oregano, and cumin and cook for another minute until fragrant.

    Add the black beans, vegetable broth, long grain white rice, and bay leaf to the pot.

    Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the liquid is absorbed and the rice is tender.

    Cook’s note: Do not lift the lid during cooking to allow the rice to steam properly.
