The method

Pierce the eggplants all over with a fork and place them on a baking sheet lined with parchment paper.

Remove the eggplants from the oven and let them cool for a few minutes until they are safe to handle.

Slice the eggplants in half lengthwise and scoop out the soft flesh into a medium bowl, discarding the skins.
