  • 250 gcremini mushroom, sliced

  • 6 cupvegetable broth
  • 1 pcsdried bay leaf
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

The method

Step by step

    Rinse the pearl barley under cold water until the water runs clear, then set aside.

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the yellow onion, carrot, and celery to the pot and sauté for 5-7 minutes until softened.

    Add the cremini mushrooms and cook for another 5-8 minutes, stirring frequently, until they release their moisture and start to brown.

    Pour in the vegetable broth, add the rinsed pearl barley, and the bay leaf.
