The method

Step by step

    Wash the white rice thoroughly under cold running water until the water runs clear; drain well.

    In a medium saucepan, combine the coconut milk, water, turmeric powder, lemongrass, bay leaf, kaffir lime leaf, and salt. If using, add the ground candle nut.

    Bring the mixture to a boil over medium-high heat, stirring occasionally.
