In a large pot, combine the coconut milk, water, grated turmeric, bruised lemongrass, knotted pandan leaves, bay leaves, kaffir lime leaves, and salt.

Bring the mixture to a gentle boil over medium heat, stirring occasionally to prevent the coconut milk from curdling.
