Equipment

The method

Step by step

  1. 1

Prepare the suya spice blend by combining the peanut butter, ground ginger, garlic powder, smoked paprika, cayenne pepper, onion powder, salt, and black pepper in a small bowl.

    About 2 min

Cook’s note: Ensure the peanut butter is smooth and unsweetened for the best flavor.

  2. 2

Place the thinly sliced beef sirloin in a large bowl and add the prepared suya spice blend.

    About 1 min

  3. 3

Use your hands to thoroughly coat each piece of beef with the spice mixture.

    About 2 min

Cook’s note: Wear gloves if you prefer to avoid getting the spice mixture on your hands.

  4. 4

Cover the bowl and let the beef marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

    About 30 min

  5. 5

Preheat your grill or a grill pan over medium-high heat.

    About 5 min

Cook’s note: If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.

  6. 6

Lightly brush the grill grates or grill pan with vegetable oil to prevent sticking.

  7. 7

Carefully thread the marinated beef onto skewers, if desired, or place directly on the hot grill.

    About 3 min

Cook’s note: Do not overcrowd the grill to ensure even cooking and a good sear.

  8. 8

Grill the beef for 2-3 minutes per side, or until cooked to your desired doneness.

    About 8 min

Cook’s note: Beef suya is traditionally cooked to medium-well or well-done.

  9. 9

Remove the cooked suya from the grill and let it rest for a few minutes.

    About 2 min

  10. 10

Serve the beef suya hot with extra suya spice blend, thinly sliced red onion, and tomato slices on the side.

    About 1 min
