The method

Step by step

  1. 1

In a medium saucepan, combine the rolled oats, vegetable broth, carrot, celery stalk, and garlic.

    About 2 min

Cook’s note: Ensure vegetables are finely diced for even cooking and to blend well into the porridge.

  2. 2

Bring the mixture to a boil over medium-high heat, then reduce the heat to low.

    About 5 min

  3. 3

Simmer, uncovered, for 10-15 minutes, stirring occasionally, until the oats are tender and most of the liquid has been absorbed.

    About 10 min

Cook’s note: Stirring helps prevent sticking and ensures creamy consistency.

  4. 4

Stir in the spinach, nutritional yeast, soy sauce, and black pepper.

    About 1 min

  5. 5

Cook for another 2-3 minutes, or until the spinach has wilted.

    About 3 min

  6. 6

Taste and adjust seasonings as needed.

    About 1 min

  7. 7

Serve hot, garnished with fresh chives and chili flakes, if desired.

Cook’s note: For extra creaminess, a splash of plant-based milk can be stirred in at the end.
