The method
Step by step
- 1
Heat the olive oil in a large pot or Dutch oven over medium heat.
About 1 min
- 2
Add the diced onion, carrot, and celery to the pot and sauté for 5-7 minutes until the vegetables have softened.
About 7 min
Cook’s note: This step, called making a sofrito, builds a flavorful base for the dish.
- 3
Stir in the minced garlic and optional dried thyme, and cook for one more minute until fragrant.
About 1 min
- 4
Add the rinsed lentils, vegetable broth, and optional bay leaf to the pot.
About 1 min
- 5
Season with salt and black pepper and stir to combine.
- 6
Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25 minutes.
About 25 min
Cook’s note: The lentils should be almost tender at this point, but still have a slight bite.
- 7
Stir in the orzo, making sure it is fully submerged in the liquid.
About 1 min
- 8
Cover the pot again and continue to simmer for 10-12 minutes, until both the lentils and orzo are tender.
About 12 min
Cook’s note: If the mixture becomes too thick, add a splash of water or more broth to reach your desired consistency.
- 9
Remove the pot from the heat and discard the bay leaf.
- 10
Let the dish rest, covered, for 5 minutes before serving.
About 5 min
Cook’s note: Resting allows the flavors to meld and the dish to thicken slightly.
- 11
Serve warm in bowls, garnished with fresh parsley if desired.
