  • 1 tbspall-purpose flour

Ingredients

  • 115 gcandied orange slice, chopped into 1cm pieces

dusting

  • 1 tbspall-purpose flour

batter

  • 2 pcslarge egg
  • 1 cuplight brown sugar, packed
  • 1 cupall-purpose flour
  • 0.25 tspsalt
  • 0.5 cuppecan, roughly chopped

garnish

  • 2 tbsppowdered sugar, for dusting(optional)

Equipment

8x8 inch baking pan · spatula · wire rack · mixing bowl · knife · whisk · oven

The method

Step by step

  1. 1

Preheat your oven to 175°C (350°F).

    About 5 min

  2. 2

Brush an 8x8 inch (20x20 cm) baking pan with the melted butter, then add the pan preparation flour and tilt the pan to coat it completely, tapping out any excess.

    About 2 min

Cook’s note: This two-step process of greasing and flouring ensures the sticky bars will not stick to the pan.

  3. 3

In a small bowl, toss the chopped candied orange slices with the dusting flour until they are evenly coated.

    About 1 min

Cook’s note: Coating the fruit in flour helps prevent it from sinking to the bottom of the batter during baking.

  4. 4

In a large mixing bowl, beat the eggs with a whisk until they are light and frothy.

    About 2 min

  5. 5

Add the packed brown sugar to the eggs and whisk until the mixture is smooth and well combined.

    About 1 min

  6. 6

Add the batter flour and salt, stirring with a spatula until just combined; do not overmix.

    About 1 min

Cook’s note: Overmixing can develop the gluten in the flour, resulting in a tougher cookie.

  7. 7

Fold in the flour-dusted orange slices and the chopped pecans.

    About 1 min

  8. 8

Pour the batter into the prepared pan and use the spatula to spread it into an even layer.

    About 2 min

  9. 9

Bake for 25-30 minutes, until the edges are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.

    About 30 min

  10. 10

Place the pan on a wire rack and allow the bars to cool for at least 20 minutes before handling.

    About 20 min

Cook’s note: Cooling slightly makes the bars easier to cut cleanly.

  11. 11

While the bars are still warm, use a sharp knife to cut them into 16 squares.

    About 2 min

  12. 12

If using, sift the powdered sugar over the bars just before serving.
