The method

Prepare the cauliflower by cutting it into florets and pulsing in a food processor until it resembles rice grains. Alternatively, use pre-riced cauliflower.

In a small bowl, whisk together the coconut aminos, rice vinegar, and grated ginger for the sauce. Set aside.

Heat half of the sesame oil in a large skillet or wok over medium-high heat. Add the chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Add the remaining sesame oil to the skillet. Add the yellow onion and carrot and cook for 3-4 minutes until slightly softened.
