The method
Step by step
- 1
Add the pitted dates to a food processor and process until they form a sticky ball.
About 2 min
Cook’s note: Ensure your dates are fresh and soft for easier processing. If they are a bit dry, soak them in warm water for 5-10 minutes, then drain well before processing.
- 2
Add the almond flour, shredded coconut, almond butter, vanilla extract, chia seeds, and salt to the food processor with the dates.
About 1 min
- 3
Process the mixture until all ingredients are well combined and a dough-like consistency is formed.
About 2 min
Cook’s note: Scrape down the sides of the food processor as needed to ensure everything is incorporated.
- 4
Transfer the mixture to a medium bowl.
About 1 min
- 5
Using clean hands, roll the mixture into 12 equally sized balls, about 1 inch in diameter each.
About 5 min
Cook’s note: If the mixture is too sticky, slightly dampen your hands.
- 6
If desired, roll each energy ball in the extra shredded coconut to coat.
About 2 min
Cook’s note: This adds extra texture and flavor, but is completely optional.
- 7
Place the energy balls on a plate or in an airtight container and refrigerate for at least 30 minutes to firm up.
