- 180 mllemon juice, freshly squeezed

The method
Step by step
- 1
Pour the apple juice, cranberry juice, orange juice, and lemon juice into the main pot of a coffee percolator.
About 2 min
- 2
Add the sugar to the juices and stir until it is mostly dissolved.
About 1 min
Cook’s note: Stirring now prevents a layer of sugar from scorching on the bottom of the pot.
- 3
Place the cinnamon sticks, whole cloves, and whole allspice into the percolator's filter basket.
About 1 min
Cook’s note: Using whole spices prevents the final drink from becoming cloudy.
- 4
Assemble the percolator, plug it in, and let it run through one complete brewing cycle.
About 15 min
Cook’s note: The percolator will gently heat and circulate the juice over the spices, infusing it with flavor.
- 5
Once the cycle is finished, carefully remove the hot spice basket and discard the spices.
About 1 min
- 6
Serve the wassail immediately while hot, ladling it directly from the pot into mugs.
Cook’s note: You can keep the wassail on the 'warm' setting of the percolator for serving at a party.
