Equipment

The method

Step by step

  1. 1

In a medium bowl, stir together the drained crushed pineapple and granulated sugar until well combined.

    About 2 min

  2. 2

In a separate small bowl, mix the chopped walnuts with the melted dairy-free butter.

    About 2 min

Cook’s note: Tossing the nuts in butter helps create a richer, more distinct layer.

  3. 3

Spread half of the crushed vanilla wafers in an even layer on the bottom of an 8x8 inch (20x20 cm) baking dish.

    About 2 min

Cook’s note: You don't need to press this layer down firmly; a loose layer is fine.

  4. 4

Spoon half of the pineapple mixture over the wafer layer and spread it out evenly.

    About 2 min

  5. 5

Sprinkle half of the walnut and butter mixture over the pineapple.

    About 1 min

  6. 6

Repeat the layers, starting with the remaining crushed wafers, followed by the rest of the pineapple mixture, and finishing with the remaining walnuts.

    About 4 min

  7. 7

Cover the dish with plastic wrap or a lid and place it in the refrigerator to chill.

    About 1 min

  8. 8

Let the dessert set for at least 4 hours, or overnight, until firm.

Cook’s note: Chilling overnight yields the best texture as it allows the wafers to soften and absorb the moisture.

  9. 9

To serve, slice into squares. Garnish with a dollop of whipped topping and a maraschino cherry, if using.
